Spotlight: Stacy Theobald

Stacy Theobald

Born: Pomona, California
Raised: La Verne, California

What brought you to St. George? After 12 years of marriage we adopted our oldest son, DJ. We had started a family business and my husband was traveling to Vegas for work and was gone 3 to 4 days out of the week. We would travel with him but eventually that was not always possible. We decided to move to St. George so that my husband could come home every night instead of staying in Vegas and being away all of the time. We knew that St. George would be a great place to live and raise our family.

College: after high school I attended the Fashion Institute of Design and Merchandising and received an associates degree in Merchandise Marketing. I attended BYU for a year, got married and then transferred to the University of Southern California (USC) and received my bachelor of Science degree in Business Administration.

After College I worked as a medical sales rep but I realized I loved working with people but didn't like the cold calling, I then got a job as an HR Administrator and worked for a government contractor in the aerospace industry. When DJ was born I became a stay at home Mom, which is the most challenging and greatest career of my life. I continued to work from home and telecommuted for the company I worked for and also worked as a consultant/director for another company that was bidding on a government contract. After we adopted our daughter Cali I decided it was time to focus on being a full time Mom, I am so thankful I made the decision to leave the professional world. I have been richly blessed because of this choice.

I continue to have opportunities to use my business background in our family business by overseeing the accounting and handling the taxes for our business. I currently serve as the Treasurer for the little valley elementary PTA and as the volunteer coordinator in my children's classrooms.

How did you meet your husband? I met my husband David in Seminary our Freshman year of High School and were friends. We "liked" each other for about a week our Sophomore year but remained friends after that. We did not start dating until after his Mission. I had come home from BYU to be a bridesmaid for one of my friends. David had been home from his Mission for a month and had come to the reception. When he came through the receiving line he stopped and talked with me for the rest of the night, he asked me on a date that night and we have been together ever since.
We have been married for 23
Years this April.

Kids: DJ (10), Cali (8), Tyson (4)

Hobbies/what I like to do: one of my favorite things to do is run and exercise. 17 years ago my husband talked me in to running a marathon with him, I loved the challenge and have been running marathons ever since, this past Oct was my 19th marathon. I also enjoy doing yoga, Pilates, weight lifting and spin. Exercise is especially fun when I do it with friends. I like eating clean, organic whole foods and I enjoy taking not so healthy recipes and making them healthier for my family. I also like educating myself about health and nutrition. I love to read and most of all I love being with my husband and kids.  The beach is my favorite place to visit and I enjoy going there with my family every summer. I consider it my annual trip away from reality, it's our own little paradise.

Something unique about you: I have been blessed to have all three of my children come through adoption and at 45 years old, when most people have finished growing their families, I'm still trying and waiting to adopt one more.

Where were you born and raised-
I was born in Salt Lake City, but moved to Germany at the age of three.  When I was eight years old my family moved to Texas, then New York, then Virginia.  I lived in Virginia from the age of 11 until right before my senior year of high school.  Then my family moved back to Utah. Other than a short internship for my husband in Florida and a year in California, I've been in Utah ever since then. And I think I might finally be getting used to it. Ha!

What brought you to St. George-
My husband took a job in St. George 6 1/2 years ago, so I followed him:)...and I've loved it ever since.

Schooling and career-
My career consists of filling the day with the needs of my children and family.  I have a Bachelor's degree in Psychology from the University of Utah.  I'm also in the (slow) process of finishing a 2nd Bachelor's degree in Speech Language Pathology. Hopefully in the next year or so.

How you met your husband-
My husband and I lived in the same apartment complex in Provo.  The Riviera. We met at an 80's themed ward dance. We danced to Michael Jackson and became fast friends. Later, our apartment complex had a competition playoff with a certain popular 2 player video game. Let's just say that I had quite a bit of practice playing against my younger brother during the Christmas break.  It came down to my husband and I playing for the win.  I ended up winning and he bought me dinner as my prize. Now, over 15 years later, I still try to beat him at everything!

Kids (names and ages)-
Ella (11), Foster (9), Harrison (7), Avery (4), Presley (6 months)

Hobbies and favorites-
I enjoy reading, cooking, exercising and going on vacation. I also love to make lists and cross things off of the lists once they're done. Oh, and I love to surprise people.  That's my favorite.

Something unique about you-
There is nothing too unique about me.  I can honestly say that I'm quite ordinary and I'm more content with that than I ever have been before:)

I was born in Salt Lake City but moved to San Francisco when I graduated from high school and then came back to Salt Lake to go to the University of Utah.  After one year there, I headed back to San Francisco.

I worked for U. S. Steel company as an inside salesperson until I met my husband Mike.  We were married and I worked for two more years and then stayed home.

We have 4 children ranging from the ages of 45-35: 3 girls and 1 boy.

I became very involved in the community and was a city  commissioner for the bicentennial celebration and the constitution celebration .  Mike became  a member of the Lion's Club and our whole family was involved in community events.   I opened a travel agency with my mother and sister.  I had opportunities to travel all over the world.  I then became involved in the chamber of commerce and then became president.   After 30 years of living in Foster City, we moved to Rescue Ca.  Mike was involved in field trials with our dogs and horses.  I traveled with him for a while.

We were visiting our son Steve Hewett about a year and a half ago, and he said he would build us a home.  We decided to sell our house in California and move to St. George.  We have been here about 6 months.  We have 11 grandchildren living in St. George and 2 still living in California.  We also have one great grandchild here in St. George.

Where were you born and raised?  I was born on an Air Force Base in Okinawa, Japan, but I was raised in Nephi, Utah!
Where did you go to college?  I attended UVSC where I received my degree in Elementary Education in 2004.  Since then, I have taught 2nd Grade and Reading Intervention at Panorama Elementary.  However, this past year, I have been trying to teach myself how to be a “Stay at Home Mom,” which has proved to be very challenging…but I LOVE IT!!  I hope to be able to stay at home with my kiddos for a while!
How did you meet your husband?  I met Jeff at an FHE activity at a cabin in Pine Valley, but of course he took my best friend out the next night!   However, while waiting in line for the rollercoaster on the top of the Stratosphere, we started talking and realized we had everything in common!  He called the next week, we dated for a year, got engaged on Valentine’s Day 2004, and were married two months later!  We will celebrate 10 great years in April.
What are the names and ages of your kids?  Kaitlyn (8), Kolten (6), Kamryn (3), and Kassidy (9months)!
What are your hobbies?  My passions are snow skiing and scrapbooking!  I also love camping, riding horses, hiking, boating, cooking/baking, and just about anything else I can do with my kids and hubby.  My hobbies do not include doing the dishes or cleaning bathrooms!
What is something unique about you?  I was the Valedictorian of my department at UVSC, but I promise I am not a nerd!!  And, oddly enough, I love to iron!

Where were you born and raised?  In Annabella, Utah (very small town near Richfield)

What brought you to St. George?  We have been in St George for 10 years now.  Our love for St George and my husbands job brought us here.

Where did you go to college? What degree did you earn? What have you done since then?

I attended Snow college after High School and then went to cosmetology school and worked as a hairstylist for about 5 years until my first daughter was born.  I have also taken classes at Dixie High and Mohave college working towards prerequisites for dental hygiene. After our third daughter, I decided to take a break from my schooling and focus on my family!

How did you meet your husband? How long have you been together?
I met my husband by luck!  I asked a mutual friend of ours to set me up with his friend who I thought was super cute without knowing his name.  Well. he set me up with the wrong friend, but I decided to go out with this guy anyway.  We hit it off immediately and have been in love ever since!  The "wrong " guy ended up being  Mr. right!  We met for the first time on Valentines day 16 years ago.
The only time we have been apart since that day was when Tyler served a mission.  We wrote the entire time and were married 3 months after he returned home.

What are the names and ages of your children? Alexa 9. Makenna 4, Alyvia (aka: Lilly) 3

What are your hobbies and favorite things to do?
I love going to yard sales, thrift shops and antique stores and would rather spend a day "treasure" hunting thrift stores than at the mall.
I also REALLY, I mean REALLLLLY  love food and spend a ridiculous amount of time trying to make any recipe healthy and delicious.  Fact:  I DO NOT like to cook, but I do a lot of it trying to make recipes as healthy and yummy as possible. It's not uncommon for my family to ask what strange thing I added to their food.  (deceptively delicious!)
Fact: I may or may not have a slight problem with drinking Pepsi. I can't help it,  It makes me happy:)

Another thing that consumes an absurd amount of my time is studying emergency preparedness and food storage.  I started canning my own food this year and cannot wait to get a garden growing this spring so that I can bottle up all of its deliciousness!

What is something unique about you? I love Christmas movies and watch them all year round, even in the summer.
Also, If you come in my house you will see my huge display of vintage, colorful dishes.  I often hear, "oh, my grandma/mom had those in their kitchen back in the 50's.  My hubby calls it the "museum".

I secretly wish I lived on a farm, and since that's not going to happen, I am trying to convince my hubby that we at least need chickens in our backyard.
